Bird's Nest Treats {w/ recipes}

hello friends. Today I am so happy to have Sarah from To Be Mrs. Collier guest posting. She is sharing some delicious Easter treats.

Irish Car Bomb Cupcakes {w/ recipes}

Top o' the morning to you!

Happy St. Patty's Day! I thought I'd share one of my favorite cupcake recipes:
Irish Car Bomb Cupcakes



If you're not familiar with the drink, an Irish Car Bomb is a Guinness beer with a shot of Jameson Irish Whiskey and Bailey's Irish Cream. In "bomb" drink fashion, the shot is dropped into the beer and then you basically chug it.

If you're in the mood for something sweet and want to celebrate your Irish pride (because everyone's Irish on March 17th), these cupcakes will do the trick. The cake is a dark chocolate stout  (the Guinness) and the frosting is a basic butter cream with a little Bailey's and Jameson Whiskey, just enough for an insane frosting flavor. {Since the alcohol in the frosting is NOT cooked off, please be sure you only make these if you are of the legal drinking age.}

Jiffy Pudding {w/ sweets}


hello friends! Today marks the first day of my blog-o-versary month!

I started this little blog on Leap Day, February 29th, 2012. To celebrate I have lots of fun things planned this month, including treasured secret family recipes and a giveaway (or two).

Starting off this anniversary month is a recipe for a favorite dessert in the w/ household. This is a classic from Steven's family. He made it for me on one of our first dates {I guess he knew the way to my heart was showing me he could cook}.

It's home-baked goodness, and so easy (it's ready in a "jiffy", hence the name). This is super easy to throw together as you're making dinner and then it's ready for dessert.

Dark Chocolate Peppermint Truffles {w/ recipes}

Today I had the privilege to guest post over at Chelsea's Culinary Indulgence as part of her 12 Days of Christmas Treats. I made these delicious Dark Chocolate Peppermint Truffles.


These were surprisingly easy and so delicious.
Perfect for that special holiday party or to give as gifts!
{A bit better than the 7 Swans-a-swimming you'd normally receive on the 7th day}

Fabulous Friday

Weekly update.
 
So, if you haven't noticed, I've been MIA this week.
 
I have a bad habit of taking on more than I can handle. If you can believe it, a few months ago I thought I would post every day in December. I was going to call it Daily December (creative, I know). But truth is there is just way too much fun stuff going on this month! Too many dinners with friends, too much baking Christmas goodies, hours spent enjoying a cozy fire, gallons of gas used driving around looking at lights, way too much being merry at holiday parties - and hardly any time preparing blog posts.
 
So here are a few mini updates for you....
  
 Next week I am guest posting on Chelsea's Culinary Indulgence. She has a cute series set up, The 12 Days of Christmas Treats. The series started today with Spiced Eggnog Donuts (yum!) and will continue through Christmas day. Be sure to check it out to see all the fun treats that are planned. I will be posting on the 20th with a decadently rich, holiday chocolate treat.

Yesterday I got my ornament from the HenningLove Christmas Ornament Swap. I was so excited to get something in the mail I almost ripped it open right away. But then I remembered, I am a blogger. So I must first document with pictures. That post is coming next week, December 19th.

Iced Pumpkin Cookies {w/ recipes}



I've taken these delicious pumpkin cookies to several different parties over the years and they are always a hit. They're not quite cookie texture - some people have called them scones since their shape is similar, but these are very moist and almost cake/bread like. They're not overly sweet, but still a perfect treat for a cool fall day. Drizzled with a little icing and they're not bad to look at either.

Salted Caramel Ice Cream {w/ recipes}

hello friends. hope you had a fabulous long weekend. it sure was hot in San Diego. perfect to enjoy a sweet and salty treat - salted caramel ice cream.

If you've been following along with me these last few months, you may remember my post on Salted Caramel Butterscotch Pudding. I must admit, salted caramel is one of my favorite flavors as of late. But up until a few months ago, I had never taken my try at homemade caramel. {On a side note, I had made caramel corn (with brown sugar and butter, a recipe I will share once the weather changes), but not real caramel.}

Having been around the baking/cooking world in the blogosphere and the kitchen for a few years, I had heard many woes about the trouble with caramel. Everything from making sure your pan is completely clean and dry to checking the temperature every 30 seconds. And these woes are with good cause - as of today I have made 2 successful batches, and 2 complete flops. 

So now, despite a few botched attempts, I think I have got the hang of it. So hopefully you will have great luck on the first try, and not end up dumping a lumpy caramel-like mess in the trash. In hopes of your instant success, here are some of my tips.


Salted Caramel Ice Cream

Salted Caramel Sauce
1 c sugar
1 1/4 c heavy cream
1 t vanilla
1/2 t fleur de sel (flaky sea salt) {or to taste, up to 1 t}

1. In a 10 inch pan, heat sugar over medium heat. It will be helpful to use a light colored pan so you can better gauge the color, but not necessary. Using a fork, mix sugar so that it heats evenly. STOP mixing once the sugar begins to melt. Do not mix even just a little, as it will start to clump and not melt evenly. DO swirl the pan around so that the sugar continues to melt evenly. Continue until sugar is completely melted and begins to turn a rich caramel color.

2. Once the sugar reaches the desired color, reduce heat and add heavy cream, stirring until combined.

This step threw me for a loop the first time (my second attempt, since the first attempt resulted in clumpy melted sugar that I scrapped before this step). I assumed the hot, melted sugar and the cream would easily mix together. All recipes said to just mix the cream and sugar until it blends together. And they are completely right. What they don't tell you is that it looks like a complete wreck - the sugar will turn into a sticky, tacky mess and want nothing to do with the chilled cream. And can you blame it? The sugar had a good thing going on. And the heavy cream came and messed it all up. But, keep stirring. They'll work through their issues and turn into a beautiful, sweet caramel.

3. Remove from heat and add vanilla and salt.

Ice Cream Base
You are of course welcome to use your favorite vanilla ice cream base (just omit the vanilla and most, if not all of the sugar), as the caramel will compensate. I prefer an egg based custard for my ice cream, but this is one of the few flavors where, in my opinion you can get away with just milk and cream. The caramel is just that good. 


1 1/2 c half-and-half
1/2 c heavy cream
4 large egg yolks
1/3 c sugar

1. In a medium saucepan, mix half-and-half and heavy cream, over medium heat. Bring mixture to a simmer, stirring occasionally. Remove from heat. 

2. In a medium mixing bowl. whisk the eggs until they lighten in color. Gradually add the sugar. 

3. Carefully temper the cream mixture into the eggs and sugar, adding small amounts at a time until a third of the mixture has been added. Pour in the remainder and return to the saucepan over low heat. Continue to cook, stirring frequently until mixture thickens enough to coat the back of a spoon and reaches 170 degrees F. Remove from heat and allow to cool 30 minutes.  

4. Mix cream mixture with salted caramel and refrigerate at least 4 hours, preferably overnight. 

5. Pour into ice cream maker and freeze according to manufacturer's directions, typically 25-35 minutes. Freeze for another 3-4 hours. The ice cream will be softer than normal recipes due to the caramel. It will melt in your mouth, in more ways than one.

Fun in the Sun - Mountain Dew Cupcakes {w/ recipes}

Happy Independence Day my friends. Hope you have amazing plans for a day of sun, swim, and of course great food. In case you are looking for a last minute sweet treat, here is something that is sure to please kids and adults alike, so long as everyone likes Mountain Dew. That's right, Mountain Dew Cupcakes.



I made them a few weeks ago and they were a hit. I'm not much of a soda (or as so many of you call it, "pop") fan, but I LOVE lemon and the combination with lime in this recipe works really well.

I found the recipe from All Things Cupcake and followed it almost exactly, except for the frosting.


When browsing for recipes I came across a blog post from Nothing But Country that had a very cool frosting technique in which you paint the inside of the piping bag with food coloring so that the frosting picks up the color when it is being piped. I decided to try it, but unfortunately didn't have much luck. Still, I really like the style so will have to try again. I think my troubles may have come because of the type of food coloring I use. I'll have to investigate.

Since my original idea didn't pan out, I decided to use green coloring but not mix it all the way. It's a subtle marbling effect that doesn't show up in the photos, but looks nice in person. It's simple, when mixing the frosting don't combine it all the way. I use Wilton Icing Colors. They are very concentrated so a little goes a long way. Plus, they are in gel form, so it does not affect the consistency of your frosting.

Mountain Dew Cupcakes {makes 24 cupcakes}
from All Things Cupcake

cupcakes
1 c butter (2 sticks)
2 c sugar
4 eggs
3/4 c Mountain Dew
1/4 c of lemon and lime juice (about 1 lemon and 1 lime)
zest from 1 lemon and 2 limes (divided)
1 1/2 t lemon extract
2-3/4 c flour
1-1/2 t baking powder
1/4 t salt

Preheat oven to 350

1. Using a stand or hand-held mixer, beat butter at medium speed for 30 seconds.
2. Add sugar and half of lemon/lime zest, until light and fluffy.
3. Continue mixing and add eggs.
4. In a separate bowl, combine flour, baking powder, and salt. Slowly add to the butter mixture.
5. Add the Mountain Dew, lemon/lime juice, and lemon extract, continue mixing on low speed until combined.
5. Fill cupcake liners 2/3 of the way full and bake 18-20 minutes or until done.

frosting
1 c butter (2 sticks)
4 c powdered sugar
2 T Mountain Dew
lemon and lime zest (remaining from cupcake recipe, or zest from half of 1 lemon and 1 whole lime)
1 t lemon extract

1.Beat butter until creamy, slowly adding powdered sugar. 
2. Add the Mountain Dew, zest, and lemon extract .
4. Beat until combined, adding powdered sugar until desired consistency.

Add food coloring, but do not combine evenly. Using a spatula, add the frosting to a piping bag or parchment paper with a large star piping tip. Frost cupcakes as you see fit. I prefer less frosting, but by all means frost as much as your heart desires.
